- Here is a recipe I got from a coworker. It is really excellent.

- CHOCOLATE ZUCCHINI CAKE

- 1 cup firmly packed brown sugar
- 1/2 cup sugar
- 1/2 cup butter or marg.
- 1/2 cup veg. oil
- 3 eggs
- 1 tsp vanilla
- 1/2 cup buttermilk
- 2 1/2 cups all-purpose flour
- 1/2 tsp allspice
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 2 tsp baking soda
- 1/4 cup cocoa
- 1 3/4 cup shredded zucchinni, drained
- 1/2 to 1 cup semi sweet chocolate pieces

- In a large mixer bowl, cream together the sugars, butter and oil. Add eggs,
- vanilla and buttermilk; stir well to mix. Sift together all the dry
- ingredients and then shift into mixer bowl with mixture. Beat well.

- Drain zucchini, if necessary, and stir into cake mixture.

- Pour into greased 13 x 9" baking pan. Sprinkle top with chocolate pieces
- and bake in a preheated 325F oven for 45 min or until cake tests done.
- Makes 12 servings.
